Hi there and welcome to The Kelli Kollection! I’ll start off by sharing a little bit about myself, why I started this blog, and what The Kelli Kollection is all about. As you may have guessed my name is Kelli, I am from Madison, Wisconsin but a year ago after graduating college I decided to step out of my box and move across the country to Los Angeles, California! To say it has been a rollercoaster this past year would be an understatement, but I have learned so much about myself and grown in more ways than I knew possible. So my advice if you are young, have no ties, and are thinking about moving, but are slightly apprehensive or nervous, just go for it because now is the time!
One thing I’ve always known about myself, but that has become even more apparent since I’ve moved, is that I have several different passions in life. My main career is a registered nurse in the operating room, but I also am interested in hosting, as in tv hosting, and nutrition, health and fitness! like to describe myself with the five F’s-Foodie, Fitness, Family, Friends & Fun. These are the five words that best describe me and what I love in life (not necessarily in that order)! I am hoping in the next 5-10 years I can work my way towards a career where I can blend my passion of helping others with my passion of talking, or I mean hosting haha ;), and healthy living!
I decided to start this blog because I want to help others achieve their goals in life. Whether you want to lose weight or get into better shape, I want to help you mentally, physically or both! When it comes to nutrition, I have a very holistic view, meaning I believe that while developing a healthy balanced diet, one needs to take into account the person as a whole as well. Eating healthy is no different than any other goals in life; it takes mental strength, perseverance, and a daily commitment to your goal. I enjoy eating (who doesn’t), so I believe in eating delicious, yet healthy foods. I am about nurturing and caring for one’s self for the long term. I do not believe in cutting out carbs, fats, or any food group at all. One should eat a balanced variety of clean, flavorful foods that satisfy! You’ve heard the old cliché “You are what you eat” and nothing could be truer. I hope to eventually add a fitness section to the blog as well, but since I believe nutrition plays an even bigger role, I’ll start with that.
Throughout my life, I have always been pretty health conscious and I owe a lot of that to my mom for starting my brother and I out with good nutrition habits early on. However in the past five years I became even more invested in my own fitness and nutrition regimen. I used to be a big calorie counter, so I ate little fruit salads for lunch and Lean Cuisines for dinner. Eventually I got sick of those Lean Cuisines and decided to become more knowledgeable on what clean eating really was. It changed my life. For the last several years I have suffered from a unique form of thyroid disease, and because standard medication has not always worked for me, I have researched and learned as much as I can so I can use food as my medicine. I fill my grocery cart with fresh vegetables, fruits, whole grains, and nutritious foods that I can create delicious meals out of. That’s right MEALS! Many people think to lose weight or get into shape they need to eat very little and deprive themselves, but this is not true. In order for our bodies to function at their best, they need proper care and nourishment. My recipes will always be full of flavor and nutrition that will fill you up until it is time for the next snack or meal of the day!
Despite what most people think, healthy eating can be so delicious and I want to show you that! Don’t get me wrong, I love my dark chocolate and ice cream, but I have been able to find a good balance by allowing myself to enjoy a “cheat” during the week. Be sure to check out my “cheat day favorites” tab! I absolutely love cooking and I look forward to planning & cooking my meals each and every day! I love cooking healthy, clean and flavorful meals for others as well, and truly enjoy seeing their opinion of eating healthy food change with every bite.
