I’ll admit that I have never been a person who wants a smoothie for breakfast or any meal for that matter. Don’t get me wrong I love smoothies, but I am not a “breakfast on the go sip a smoothie as I walk” type of person. I like to have time in the morning to sit down with my coffee and savor each bite of my breakfast like I do with my oatmeal, scramblers or avocado toast. Anyway I have seen these smoothie bowls popping up on instagram for months now, and thought I should give them a try!
I am a little late into the smoothie bowl game, but now that I have tried several varieties, I love them! It was definitely odd at first eating a smoothie out a bowl, and I even blew on my first spoonful like I was about to eat hot soup haha oops! It was a nice change from my usual oatmeal for breakfast and can even be had as a satisfying & energizing snack as well. I normally love when my smoothies or shakes are extra thick, so when I made the smoothie bowl I made sure to make it that way. Instead of putting ice in my smoothies I like to use frozen fruit, which makes it cold and acts as the thickening agent too. I keep sliced up bananas in my freezer, so they’re ready to go whenever I need them.
In the end I actually don’t mind having a smoothie for breakfast… in a bowl that is! I like that I still have a breakfast I can take bites or spoonfuls of and also have a little crunch or something extra to it. This was honestly like eating soft serve for breakfast, but with all of these extra health benefits! I love scooping up a big spoonful of smoothie, fresh fruit and granola! The smoothie is great on its own, but it is the mix ins that really make these bowls. So blend away, top with it some tasty mix ins, sit back and enjoy every bite!
- 1/2 frozen banana (I have mine in ~ 1 inch thick frozen slices)
- 1/2 scoop vanilla protein powder (about 1 tbsp)
- 1/3 cup almond milk
- 1 cup frozen mixed berries (I used strawberries, blackberries and blueberries)
- 1/3 ripe avocado
- small handful of baby spinach leaves
- 1/8 cup granola (I use flax pecan granola from Whole Foods)
- In a blender mix together above ingredients
- Add granola or chia seeds and fresh fruit on top
